Carrot rice is a unique dish in Pakistani recipes. It is the tastiest and healthiest dish because it contains healthy ingredients. Carrot rice is a famous Chinese dish, but in the Pakistani version, we add all Pakistani spices to give it a twisted flavour. 

Carrots are a rich source of vitamin A, the healthiest ingredient for our eyes. This recipe for carrot rice is the simplest, so it can also be in a kid’s lunchbox.

  • 3 cups – of cooked basmati rice or any rice 
  • 1 cup – carrot grated
  • ½ cup – onions (sliced thinly)
  • ½ cup – of green peas, fresh or frozen
  • 2 – green chillies 
  • 1 tbsp – ginger-garlic paste
  • 2 tbsp – coriander leaves (chopped)
  • 2 to 3 – curry leaves
  • 7 to 8 – cashew nuts (roasted)
  • a pinch asafetida (hing)
  • 2 tbsp – oil (or ghee)
  • salt to taste

Whole Spices

  • 2 – cloves
  • 1 – green cardamon(elachi)
  • ½ inch – cinnamon(dal chini)
  • ½ tsp – mustard seeds
  • ½ tsp – cumin (jeera) seeds

Dry Spices

  • ½ tsp – turmeric powder
  • ½ tsp – red chilli powder
  • ½ tsp – garam masala powder
  • 1 tsp – sambhar powder


  1. Take oil/ghee in a cooking pot and heat it. Then add whole spices, and saute for a few seconds.
  2. Then add mustard and cumin seeds to the pot and saute it until it splits. 
  3. Then add green chillies, curry leaves, and hing (asafetida) and saute it. 
  4. Next, add onions and ginger garlic paste and saute it till the onions get light brown.
  5. You can add now green peas and grated carrots and cook for 3 to 4 minutes. After this, add turmeric, red chilli powder, garam masala, sambar powder, and salt and cook for more than 1 minute. 
  6. Then add cooked basmati rice, stir everything well, then turn off the stove.
  7. The dish can be garnished with coriander leaves & roasted cashews. Served hot with raita or yoghurt, this South Indian carrot rice is sure to please.
