Ingredients of Mutton Fry
- Mutton, finely chopped half kg
- Turmeric powder 1 tsp
- Water 1 cup
- Ginger garlic paste 1 1/2 tsp
- Chilli powder 2 tsp
- Vegetable oil 4 tbsp
- 2 tbsp Ulavacharu paste (optional) 2 tbsp
- For the base:
- 3 tbsp Oil
- 2 tsp Garam masala
- 1 Onion, finely chopped
- 6-7 Green cardamom
- 6-7 Cloves
- 1-inch Cinnamon stick
- 10-15 Curry leaves
- 4-5 Green chilies, sliced
- Fresh coriander For garnishing
- Spring onion For garnishing
- Brown the mutton lightly in a pan with 4 tbsp of oil to seal the juices.
- Turmeric powder, ulavacharu paste (optional), chili powder, salt, and ginger garlic paste are also to be added.
- On medium flame, cook for 8-10 minutes, stirring frequently.
- Add the water and pressure cook for 20-25 minutes or 4-5 whistles when the mutton is tender.
- Add cloves, green cardamoms, cinnamon sticks, and oil to a second pan and let them splutter.
- The onions and curry leaves should be added last, followed by the green chilies.
- It must be sautéed for 5-6 minutes and seasoned with salt.
- Let the onions simmer for 6-8 minutes on low heat.
